
There’s nothing better than a warm bowl of vegetable soup on a cold winter day. I used my InstaPot (optional) to save some time, combining organic ground turkey with onion, garlic, vegetable broth, diced tomatoes, Good & Gather’s (Target brand) Tomato Basil sauce and a few additional seasonings and spices. Pairing it with a cornbread made this a complete and hearty dinner with plenty of leftovers for lunch the next day.
Organic Vegetable Soup
Ingredients 🌿
- Olive Oil
- 2 lbs Ground Turkey
- 1 Medium Yellow Onion
- Green Bell Pepper
- Fresh Minced Garlic or Garlic Powder
- Onion Powder
- Bragg’s Herbal Seasoning
- Pink Himalayan Salt
- Black Pepper
- Chili Powder
- Oregano
- 16 oz Tomato Sauce
- 16 oz Diced Tomatoes
- 8 oz Vegetable Broth
- Worchestershire Sauce
- 1 bag frozen mixed vegetables
- 1 bag frozen zucchini & squash
Directions 🔖
- Warm olive oil in InstaPot or stovetop
- Add chopped onions and green peppers
- Season ground turkey generously and add to InstaPot and set to pressure cook on high until evenly browned
- Add vegetable broth and stir
- Add tomato sauce, diced tomatoes, worchestershire sauce and stir
- Add frozen vegetables and stir
- Add additional seasoning as needed
- Cover and cook for 20 minutes and serve
