Organic Vegetable Soup

There’s nothing better than a warm bowl of vegetable soup on a cold winter day. I used my InstaPot (optional) to save some time, combining organic ground turkey with onion, garlic, vegetable broth, diced tomatoes, Good & Gather’s (Target brand) Tomato Basil sauce and a few additional seasonings and spices. Pairing it with a cornbread made this a complete and hearty dinner with plenty of leftovers for lunch the next day.

Organic Vegetable Soup

Ingredients 🌿

  • Olive Oil
  • 2 lbs Ground Turkey
  • 1 Medium Yellow Onion
  • Green Bell Pepper
  • Fresh Minced Garlic or Garlic Powder
  • Onion Powder
  • Bragg’s Herbal Seasoning
  • Pink Himalayan Salt
  • Black Pepper
  • Chili Powder
  • Oregano
  • 16 oz Tomato Sauce
  • 16 oz Diced Tomatoes
  • 8 oz Vegetable Broth
  • Worchestershire Sauce
  • 1 bag frozen mixed vegetables
  • 1 bag frozen zucchini & squash

Directions 🔖

  • Warm olive oil in InstaPot or stovetop
  • Add chopped onions and green peppers
  • Season ground turkey generously and add to InstaPot and set to pressure cook on high until evenly browned
  • Add vegetable broth and stir
  • Add tomato sauce, diced tomatoes, worchestershire sauce and stir
  • Add frozen vegetables and stir
  • Add additional seasoning as needed
  • Cover and cook for 20 minutes and serve
